Today I’ll show you how to create an elegant Ruffles and Pearls cake.
This refined yet simple design features sweeping buttercream ruffles, delicate beaded borders, ribbon roses and a custom pearl monogram.

This style is perfect for weddings, but the techniques translate beautifully to cakes for any celebration. Enjoy the video and adapt the ideas to suit your event.

Materials for Ruffles and Pearls Cake:
For this design we used 8-inch and 6-inch tiers, frosted with a light vanilla buttercream. A fluffy or classic vanilla buttercream both work well — choose the texture you prefer.
We stacked the tiers with bubble tea straw supports, and each tier rests on a cardboard cake circle trimmed to size.
Piping tips: Petal tip (Wilton 104) for ruffles, small round tip (Wilton 4) for beads.
White candy coating (use your preferred brand), a lollipop stick for anchoring the topper, sugar pearls, and piping gel (optional) to secure any loose pearls on the monogram.
Miscellaneous tools: Viva paper towels (or lint-free towels) if using the paper-towel smoothing method, a fondant smoother (optional), angled spatula, turntable (helpful), waxed or parchment paper and a cookie sheet or tray for chilling pieces.
Alternative to Chocolate Cake Topper
If you prefer not to use candy coating, you can make the topper from gum paste and attach sugar pearls with a dab of piping gel or tylose glue. Gum paste letters should dry for a couple of days (longer in humid conditions) to ensure they are sturdy.
Whether you choose gum paste or chocolate, make at least one extra letter as a backup in case of breakage.

Additional Notes
Chill a chocolate monogram briefly before handling to reduce fragility. Avoid using delicate meringue letters in humid environments, as they can lose their structure over time.
