Strawberry Waffles with Dark Chocolate Chunks

I miss relaxed weekend brunches with friends and family, so I recreate the vibe at home. Today’s menu features Dark Chocolate Chunk Strawberry Waffles — a decadent yet lighter take on a classic brunch favorite.

Dark cocoa powder and dark chocolate chunks are folded into a light waffle batter along with fresh sliced strawberries. The result is fluffy, chocolate-forward waffles brightened by juicy berries. This version uses wholesome ingredients and an optional protein powder boost so you can enjoy indulgence without excess sugar and fat.

How to Make Dark Chocolate Chunk Strawberry Waffles

Dry mixture: In a large bowl, whisk together flour, dark cocoa powder, chocolate protein powder (optional), baking powder, sweetener, cinnamon, and salt until evenly combined.

Wet mixture: In a separate bowl, beat the eggs with vanilla and almond milk. Pour the wet mixture into the dry ingredients and gently stir with a rubber spatula until just combined. Fold in the sliced strawberries and dark chocolate chunks.

Cook: Preheat and spray the waffle iron generously with cooking spray. Spoon heaping ladlefuls of batter onto the hot iron and close the lid. Cook each waffle 5–7 minutes, until set and golden brown. Repeat with the remaining batter to make about four large waffles.

Serve topped with extra sliced strawberries and warm pancake syrup if you like. Enjoy!

Other Flavor Combination Suggestions

This batter is versatile. Swap fruits and chocolate, or omit the cocoa and protein powder to make a traditional waffle batter and add a wider range of fruit. If you remove the cocoa and protein powders, add about ¾ cup more flour so the batter has the right consistency.

Try combinations such as:

  • Chocolate and raspberry
  • Plain batter with white chocolate chunks and blueberries
  • Chocolate and cherry
  • Plain batter with peaches, apricots, or nectarines
  • Plain batter with cranberries
  • Red velvet: add a few drops of red food coloring and ½ teaspoon white vinegar to the chocolate batter, then fold in dark chocolate chunks
  • Plain batter with blackberries

Important Note Regarding Sweetener Substitutions

If using stevia or another sugar substitute, make sure it is a one-to-one baking blend that replaces sugar cup-for-cup. Many zero-calorie brands offer baking blends formulated for a direct swap; regular cane sugar works as well. Adjust sweetness to taste.

  • ⅓ cup dark cocoa powder
  • 2 scoops chocolate protein powder** (optional)
  • 2 tsp baking powder
  • ⅓ cup stevia baking blend*** (or regular sugar)
  • 1 tbsp ground cinnamon
  • ⅛ tsp salt
  • 2 large eggs
  • 1 ½ cups unsweetened almond milk
  • 1 tsp vanilla extract
  • 1 cup sliced strawberries
  • ¼ cup dark chocolate chunks

Instructions

  1. In a large bowl, whisk together the flour, cocoa powder, protein powder (if using), baking powder, sweetener, cinnamon, and salt until well combined.
  2. In a separate bowl, beat the eggs with the vanilla and almond milk. Pour the wet mixture into the dry ingredients and stir gently until combined. Fold in the sliced strawberries and chocolate chunks.
  3. Preheat and spray the waffle iron. Spoon heaping ladlefuls of batter onto the iron and close the lid. Cook each waffle 5–7 minutes until golden and cooked through. Repeat with remaining batter to yield about four large waffles.
  4. Top waffles with additional strawberries and warm syrup if desired. Serve immediately.

Notes

*If using all-purpose flour you may need about ¼–½ cup less milk.

**You can omit the protein powder; if you do, add ⅓ cup more cocoa powder to maintain chocolate flavor.
