When I first bought popsicle molds, I immediately pictured an adult twist on fruity frozen treats. I hadn’t shared an alcoholic recipe here before, so I wanted something fun and a little healthier than the usual sugary cocktails. The result: fresh fruit popsicles nestled into glasses of bubbly—simple, cheerful, and perfect for brunch.

Ingredients
- 1 overly ripe pineapple
- 1 kiwi
- Your favorite champagne or sparkling wine
- Orange extract (a few drops)
- Apple slices for garnish
Instructions
- Peel and core the pineapple, then cut it into chunks. Blend the pineapple on high until smooth.
- Slice the kiwi into thin rounds.
- Pour about 1/4 of the pineapple purée into each popsicle mold and freeze until partially set, about 1 hour. This helps the slices stay suspended.
- Remove molds briefly, add kiwi slices into each mold, then pour the remaining pineapple mixture to fill.
- Freeze until solid, about 2 hours or longer depending on your freezer.
- When ready to serve, place one popsicle in each serving glass.
- Open the bottle of champagne or sparkling wine and pour it around the popsicle in each glass.
- Add a few drops of orange extract to each glass and garnish with apple slices.
- Sip and enjoy—use the melting popsicle as a fruity mixer for your bubbly.
