  • 2 lbs chicken breasts, boneless and skinless (See Note 1)
  • 1 tbsp Dijon mustard
  • 4 tsp olive oil separated
  • 1 tbsp balsamic vinegar
  • 1/8 tsp sugar
  • 1/2 tsp dried oregano
  • 1/2 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 1/2 cup sun dried tomatoes cut into strips
  • 4 slices mozzarella cheese (See Note 2)
  • 8 leaves fresh basil

Instructions 

  • Preheat oven to 350°F.
  • Whisk together the mustard, 2 teaspoons of oil, balsamic vinegar, sugar, oregano, salt and pepper until thick and emulsified.
  • Rinse and pat the chicken dry. Using a sharp knife, cut a horizontal pocket into each breast without cutting through.
  • Brush the chicken inside and out with the balsamic dressing.
  • Place on a work surface and layer each breast with 4 basil leaves, a slice of mozzarella, and sun-dried tomatoes. Secure with a toothpick or skewer diagonally.
  • Heat the remaining 2 teaspoons of olive oil in an ovenproof skillet over high heat. Sear the chicken 1–2 minutes per side until golden.
  • Transfer the skillet to the oven and cook 15 minutes, until the cheese is melted and chicken is cooked through. Rest 2–3 minutes. Garnish with torn basil and serve with sautéed vegetables.

Notes

  1. When cutting the pocket, keep your hand firmly on the breast and use a sharp knife to cut gently. Avoid cutting all the way through so the filling stays inside.
  2. Each mozzarella slice should be about 1/4 inch thick; use roughly 4 ounces total for the recipe.
