Irresistible Matcha Dusted Chocolate Almonds!
Inspired by classic cocoa-dusted almonds, these Matcha Dusted Chocolate Almonds are a simple, elegant snack that balances earthy matcha, rich dark chocolate, and crunchy almonds. What began as a small experiment turned into a favorite treat I couldn’t stop nibbling.

This recipe is ideal for matcha fans and anyone who prefers desserts that aren’t overly sweet. The slight bitterness of ceremonial matcha combined with dark chocolate keeps the sweetness in check, while the toasted almond center adds the perfect crunch.
The recipe is straightforward and uses just three main ingredients (plus an optional pinch of flaky salt). You can melt the chocolate in the microwave or over a stove using a bain-marie. The process takes a bit of time but is calming and definitely worth it for the final result.

Ingredients
- Almonds → Use raw or lightly toasted almonds for extra crunch. You can substitute pistachios or cashews if you prefer, but larger nuts are easier to coat.
- Dark chocolate → Use a dairy-free dark chocolate if you need the recipe to be vegan and oil-free. Choose a chocolate that melts and sets well for best texture.
- Ceremonial grade matcha powder → For the best flavor and vibrant color, use a good ceremonial matcha. Adjust the amount to taste.
If desired, finish with a light sprinkle of flaky salt to enhance the flavors.

For a sturdy texture that holds at room temperature, melt and temper a real chocolate bar or high-quality chocolate chips rather than using coconut oil with cacao powder. Using pre-made chocolate that melts and re-solidifies cleanly ensures the almonds stay crisp and the coating remains firm.

raw or lightly toasted, for crunch -

dark chocolate chunks
chips or a broken chocolate bar; choose dairy-free if needed -

ceremonial grade matcha powder
more as needed for dusting
Instructions

Melt the chocolate using a microwave in 30-second intervals, stirring between intervals, or melt over a bain-marie until smooth.

Line a baking tray with parchment paper or a nonstick mat.

Stir the almonds into the melted chocolate to coat completely. Use two forks to lift each almond, letting excess chocolate drip off, and place them on the lined tray. Space them apart so they don’t stick together.

Chill the coated almonds in the refrigerator for about 30 minutes until the chocolate has set. Dust with matcha using a fine sifter or powdered sugar duster: sift the matcha over the parchment, then gently fold the almonds on the paper to coat. Alternatively, place cooled almonds in a lidded container with matcha and shake to coat.
