Peas – frozen peas or petit pois.

Spinach – a handful of baby spinach stirred in at the end.

One: Bring a large pan of salted water to the boil. Cook the pasta until al dente, adding the frozen peas for the last 3 minutes and the baby spinach for the final 30 seconds. Reserve a cup of the pasta cooking water, then drain.

Two: Meanwhile, heat the olive oil in a large frying pan and sauté the garlic briefly. Add the chicken pieces and cook until they start to change colour and are mostly cooked through.

Three: Stir in the crème fraîche, pesto, grated Parmesan and chopped sun-dried tomatoes. Let the sauce bubble gently for 4–5 minutes so the flavours meld.

Four: Add the drained pasta, peas and spinach to the pan. Add a splash of the reserved pasta water at a time and toss until the sauce becomes glossy and coats the pasta. Season with salt and pepper, simmer briefly until the chicken is cooked through, then serve with chopped parsley and extra Parmesan.
