When we lived in Houston I could pick up fresh pizza dough from a nearby shop whenever we wanted pizza night. After moving to Lubbock, finding ready-made dough wasn’t so easy. Sometimes you want a simple solution — a dough that’s ready to build upon without the extra effort of making it from scratch.
This goat cheese, bacon, and Brussels sprout pizza solves that. It’s flavorful, a little unexpected, and yes — bacon makes an appearance. The combination of tender Brussels sprout leaves, creamy goat cheese, and salty bacon creates a balanced, satisfying pie.

For convenience, there are pizza yeast packets on the market designed for no-knead dough that simplify preparation. They eliminate long waits for activation and make homemade pizza more approachable on a weeknight. Once you have a reliable dough, the fun part is experimenting with toppings. If you’re tired of plain pepperoni or all-vegetable pies, try stepping outside the box with cheeses and seasonal vegetables.

This idea came after spotting a Brussels sprout pizza at a movie theater menu during a date night — a simple inspiration that made me want to recreate a version at home. The result is a straightforward recipe that highlights the natural flavor of the sprouts while layering in creamy goat cheese, melted mozzarella, Parmesan, and crispy bacon.

Goat cheese, bacon and brussels sprout pizza

Ingredients
- 2 1/4 cup all purpose flour, divided
- 1 envelope Fleischmann’s Pizza Yeast
- 1 1/2 teaspoon sugar
- 3/4 teaspoon salt
- 2/3 cup warm water
- 3 tablespoon extra virgin olive oil
- 1 teaspoon extra virgin olive oil (for brushing)
- 1 cup shredded mozzarella cheese
- 3/4 cup Brussels sprouts, trimmed and separated into leaves
- 2 ounces goat cheese, torn into chunks
- 1/4 cup shredded Parmesan cheese
- 4 cooked bacon slices, chopped
Instructions
Dough
In a large bowl, stir together 1 cup flour, the yeast packet, sugar, and salt. Add the warm water and 3 tablespoons olive oil and mix until combined. Gradually add another cup of flour and continue mixing until the dough forms a ball. Add additional flour as needed.
Turn the dough onto a well-floured surface and knead for about 4 minutes, or until smooth and elastic. Roll into a large circle and transfer to a pizza baking sheet, stretching the dough to reach the edges of the pan.
Pizza
Preheat the oven to 425°F (220°C).
Brush the dough lightly with the remaining olive oil. Use a fork to prick the dough in several places to prevent large bubbles. Sprinkle the shredded mozzarella over the surface, leaving a one-inch border around the edge. Scatter the Brussels sprout leaves over the cheese, then add chunks of goat cheese and sprinkle the Parmesan evenly on top.
Bake for about 13 minutes, or until the crust is golden and the cheeses are melted and bubbly. Remove from the oven and finish with chopped cooked bacon before slicing.
