Creamy Stovetop Cauliflower Mac and Cheese

This stovetop Cauliflower Mac and Cheese is rich, creamy, and comforting — with a healthy twist. Cauliflower is simmered in a milk-broth, blended until silky smooth, then mixed with gooey melted cheese and tender elbow macaroni. The result is a kid-friendly, weeknight-ready mac and cheese that comes together in about 25–30 minutes.

Instead of trying to replace pasta entirely, this recipe enhances the classic dish by folding a creamy cauliflower sauce into the macaroni. The cauliflower adds volume, fiber, and a subtle vegetal flavor while keeping the texture indulgent and familiar.

For me, this dish began during a time when I craved comfort food and struggled to eat enough vegetables. Simmering small cauliflower florets in a simple milk and broth mixture, then blending until completely smooth, created a luscious base for the cheese. Watching the cheese melt into this creamy puree is one of the most satisfying parts of making the recipe.

Because the sauce is blended, it’s a great way to sneak extra vegetables into meals for picky eaters. The flavor remains familiar and comforting, and the texture is smooth and velvety. Serve immediately for the creamiest result.

This recipe is ideal for busy evenings: it’s quick to prep, uses simple pantry staples, and makes a generous batch that can feed the family or provide leftovers for the week. Leftovers reheat well with a splash of milk to restore creaminess.

Ingredients

  • 8 ounces (about 2 cups) uncooked elbow macaroni
  • 1 ½ tablespoons butter
  • 1 ½ tablespoons flour
  • 1 cup chicken or vegetable broth
  • 1 cup milk
  • ¾ teaspoon dry mustard
  • 12 ounces (about 4–5 cups) cauliflower florets, cut into 1″ chunks (from 1 small head)
  • 1 ½ cups shredded cheese (cheddar, Gruyère, Monterey Jack, or a blend)
  • Optional: fresh parsley, salt, and freshly ground pepper for serving

Instructions

  1. Cook the pasta. Prepare the elbow macaroni according to package directions until al dente. Drain and set aside.
  2. Simmer the cauliflower. In a large saucepan over medium-low heat, melt the butter. Stir in the flour and cook, stirring constantly, just until the roux puffs slightly, about 1–2 minutes. Gradually whisk in the broth, milk, and dry mustard until smooth. Increase heat to medium-high and add the cauliflower. Bring the milk-broth to a rapid simmer (do not boil), stirring frequently. Reduce heat to medium-low, cover, and simmer until the cauliflower is very tender, about 10 minutes. Stir occasionally to prevent sticking.
  3. Puree the sauce. Carefully transfer the cauliflower and milk-broth to a blender (or use an immersion blender in the pot). Blend until completely smooth, about 20–30 seconds. Return the puree to the saucepan over medium-low heat.
  4. Combine with cheese and macaroni. Stir in the shredded cheese until melted and smooth. Add the cooked macaroni and mix until evenly coated. Taste and season with salt and pepper as needed. Serve immediately, garnished with fresh parsley if desired.

Notes

Ingredient Prep

  • Prep cauliflower florets and shred cheese ahead of time; both can be refrigerated up to 7 days before cooking.

Kids in the Kitchen

Inviting children to help can make them more likely to try new foods. Safe tasks by age:

  • Toddlers — add measured ingredients to a bowl (with supervision) and help stir after the hot steps are complete.
  • Little kids — measure pasta, butter, and flour.
  • Big kids — chop cauliflower into florets or help shred cheese with supervision.

Leftovers & Reheating

Store leftovers in the refrigerator for up to 5 days. Reheat gently on the stovetop or in the microwave with a splash of milk or water to loosen the sauce.
