<p>Sweet, creamy peanut butter centers coated in dark chocolate make these buckeye balls an easy, crowd-pleasing no-bake dessert. They are ideal for holiday trays and gift tins.</p>

<h3>Ingredients</h3>

<li>½ c butter, softened</li>
<li>1 c peanut butter, room temperature</li>
<li>½ tsp vanilla extract</li>
<li>2 ½ c powdered sugar (300g), sifted</li>
<li>Pinch of salt</li>
<li>5.5 ounces dark chocolate wafers or more for dipping</li>

<h3>Instructions</h3>
<ol>
<li>Cream together the butter and peanut butter until smooth, about 1 minute. Mix in the vanilla extract.</li>
<li>Sift the powdered sugar and add to the bowl. Mix for 2–3 minutes until it comes together. Press with a spatula if it looks crumbly.</li>
<li>Using a tablespoon, scoop out equal amounts and roll into balls. Place on a parchment-lined baking sheet, insert a toothpick into the top of each, and freeze for 1 hour.</li>
<li>Melt the chocolate wafers in a double boiler with the water steaming but not boiling. Transfer to a short cup for dipping.</li>
<li>Hold each ball by its toothpick and dip straight down into the chocolate, leaving the top exposed. Shake off excess and return to the parchment. Repeat with remaining balls.</li>
<li>Chill the dipped buckeyes in the refrigerator for at least 2 hours to set the chocolate.</li>

<p>Best after 24 hours of chilling. While 5.5 ounces of chocolate can cover the batch, plan to have extra on hand so the last pieces dip easily — many bakers start with around 10 ounces and reserve any leftover melted chocolate for another use.</p>
