I make this often, usually without cheese, but feel free to add a little if you prefer. Best part: it’s quick to prepare and perfect for starting the day on a healthy note.

Ingredients 

  • 3 egg whites
  • Handful of spinach, about 1/2 cup
  • 1/2 cup onion
  • 4 or 5 grape tomatoes
  • Salt and pepper, to taste

Instructions 

  • Preheat the oven to 400°F (200°C). Lightly spray a medium skillet with cooking spray and sauté the chopped onion for 3–4 minutes until translucent. Add the spinach and cook just until wilted.
  • Transfer the spinach-onion mixture to a small glass baking dish or a small skillet. Pour the 3 egg whites over the vegetables, season with salt and pepper, top with sliced grape tomatoes, and bake for about 17 minutes until set. Serve warm with fresh fruit.
