The idea came while staying in a rustic cabin with no cell service or Wi‑Fi — it felt like the middle of nowhere. Between my mom and me we packed like we were staying a week, but somehow we forgot a muffin pan for making morning muffins for nine people.
Rather than let the mix go to waste, we poured it into a square baking dish. The result was this easy, muffin-inspired cake that’s moist, tender and perfect for feeding a crowd.
3 Ingredient Banana Nut Muffin Cake

This is muffins made ridiculously simple. You need only three ingredients:
- Banana nut muffin mix (two pouches)
- Milk (1 cup)
- Prepared cream cheese frosting
Mix the muffin mix with milk according to the pouch directions — we used mixes that call only for milk. Pour the batter into a 9×9 baking dish coated with non‑stick spray, bake, let it cool slightly, then finish with a thin layer of warmed cream cheese frosting.

For a pretty finish, top with fresh banana slices and a sprinkle of toasted walnuts. The frosting sets into a delicate crackly layer as it cools, and that texture is so satisfying when you dig in.

- Two 7.6 oz banana nut muffin mix pouches
- 1 cup milk
- Prepared cream cheese frosting
Instructions
- Preheat oven to 400°F (200°C).
- Prepare a 9×9-inch baking dish with non‑stick cooking spray.
- Stir together the two muffin mix pouches and 1 cup milk until combined; pour the batter into the prepared dish.
- Bake 20–25 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool slightly.
- Microwave about 1/3 cup prepared cream cheese frosting at 50% power for 30 seconds, or until pourable.
- Pour or spread the warmed frosting over the cake and let it set before slicing.
- Slice and top with fresh banana slices and toasted walnuts, if desired.
