This Chocolate Chip Macadamia Nut Banana Bread is full of warm, comforting flavor — cinnamon, nutmeg and vanilla combined with dark chocolate and roasted macadamia nuts. I also use some whole wheat flour for extra texture and fiber, so this loaf feels a bit more wholesome while still being an indulgence.

Before you bake this loaf — which you will, because it’s a perfect quick breakfast or snack for the week — make sure you have the right dairy component. Do you have buttermilk? If not, don’t panic. There are reliable substitutes, but lemon- or vinegar-thinned milk is not the same as true buttermilk.

That quick internet trick of adding lemon juice or vinegar to milk creates acidic milk and can work to activate baking soda in a pinch, but it isn’t equivalent to cultured buttermilk in texture or flavor. What is buttermilk?

Traditional buttermilk was the thin liquid left after churning butter from cultured cream. Modern commercial buttermilk is usually low-fat milk intentionally cultured with lactic acid bacteria. These cultures consume lactose and create acid, which denatures milk proteins and produces a thicker, tangy, slightly creamy liquid — more like a drinkable yogurt or thin sour cream than plain milk with added acid.

That slow fermentation is what gives buttermilk its smooth tang and body. Acidified milk made immediately with lemon or vinegar lacks that fermented texture and may appear curdled. For this reason, the substitution matters if you want the best texture and flavor in your baked goods.

Buttermilk substitutes that work

If you don’t keep buttermilk on hand — and many casual bakers don’t — use plain low-fat yogurt or a mix of half sour cream and half milk. Both deliver the tang and creamy consistency that buttermilk provides, and they work well in this banana bread recipe. Avoid relying on acidified milk as a direct textural replacement when you can use yogurt or sour cream instead.

I like using part whole wheat flour here because it adds a subtle nutty flavor and a bit more nutrition, but you can swap in equal amounts of regular all-purpose flour if you prefer a lighter crumb.

Ingredients

  • 1 cup (142g) all-purpose flour
  • ¾ cup (95g) whole wheat flour
  • 1 ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 2 large ripe bananas (about 1 cup mashed)
  • (145g) packed light brown sugar
  • 1 large egg
  • ½ cup (120ml) buttermilk or plain yogurt
  • ¼ cup (60ml) vegetable oil
  • 1 teaspoon pure vanilla extract
  • ½ cup (85g) dark chocolate chips
  • ½ cup (60g) chopped roasted macadamia nuts

Instructions

  • Preheat the oven to 350°F. Line a 9×5-inch loaf pan with parchment paper, leaving a 2-inch overhang on the long sides, and brush the exposed pan edges with olive oil.
  • In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg and salt.
  • In a large bowl, mash the bananas and whisk in the brown sugar until blended. Add the egg, buttermilk or plain yogurt, vegetable oil and vanilla; beat until smooth. Gently fold in the dry ingredients until mostly combined, then fold in the chocolate chips and chopped macadamia nuts. A few small lumps in the batter are fine — don’t overmix.
  • Pour the batter into the prepared pan and smooth the top. Bake 45–55 minutes, until the top is evenly browned and slightly cracked and a toothpick inserted near the center comes out clean or with just a few moist crumbs. Transfer the loaf to a wire rack to cool before slicing.
