Teriyaki Stir-Fry with Success Rice: Quick Weeknight Recipe

I plan our weekly meals almost every Sunday. Justin rarely requests anything specific—he trusts my choices and isn’t picky—so I have the freedom to be creative. Despite that, he sometimes reminds me later that I don’t make certain dishes often enough. One of those is rice. He grew up in Hawaii, where rice cookers are a constant in many homes, and he loves having rice with meals.

I do try to include rice at least once a week, but I often get the timing wrong. Either I remember too late and have only minutes before dinner is ready, or I start it too early and then forget to coordinate it with the rest of the meal. The other night I made a quick teriyaki stir fry and served it over a bed of Success Brown Rice. It was easy, fast, and everyone enjoyed it. Below is the simple recipe I used.


Easy Teriyaki Stir Fry by @NotQuiteSusie

Ingredients:

– 1 bag Success Brown Rice
– 1 tbsp olive oil
– 1 lb boneless skinless chicken tenders
– 1/4 tsp garlic powder
– 2 cups broccoli florets
– 1/2 cup cashew halves & pieces
– 1/4 cup teriyaki sauce

Directions:

– Pour 1 quart of water into a medium saucepan and submerge the Success Rice bag. Boil 8–10 minutes.
– Heat olive oil in a large skillet over high heat.
– Cook chicken tenders until done, about 5–8 minutes.
– Sprinkle garlic powder over the chicken, then add broccoli florets and cashews. Stir to combine.
– Mix in teriyaki sauce and simmer on low for 5 minutes.
– Remove the rice bag with a fork and drain.
– Serve the stir fry over a bed of Success Brown Rice.
