Viviana Foods sent me several of their gluten-free pasta varieties to review and to host a giveaway. Their lineup includes linguini, penne, fettuccine, and orzo—many of which are hard to find elsewhere. All products are tested monthly to ensure gluten levels remain under 5 parts per million (ppm) and are certified by the Gluten Intolerance Group (GIG). Their manufacturing facility is gluten-free, dairy-free, and nut-free. Below I share my impressions of each pasta, the ingredients, some recipe pairings I tried, and details about the giveaway.

My Review of Viviana Gluten Free Pasta and Ingredients
Viviana’s pasta impressed me with flavor and texture. Each variety carries enough taste that heavy sauces aren’t necessary—though they pair well with sauces when you want them. The texture across all shapes was notably satisfying: tender yet firm, with a pleasant bite.
Garlic Toasted Onion Fettuccine
I prepared my Gluten Free Chicken Alfredo with the Garlic Toasted Onion fettuccine and loved the result. The pasta’s mild garlic and toasted onion notes elevated the dish and made it especially satisfying. Ingredients: Rice Flour (brown and white), Eggs (whole eggs and egg whites), Xanthan Gum, Garlic, Onion, Olive Oil.
Gluten-Free Sweet Potato Orzo
I hadn’t had orzo in years, and this flavored sweet potato orzo was a pleasant surprise. Nutmeg is noticeable and complements the sweet potato well. It cooks quickly—about seven minutes—so it’s great for busy nights. A pinch of salt and a pat of butter were all it needed. Ingredients: Rice Flour (brown and white), Sweet Potato, Eggs (whole eggs and egg whites), Xanthan Gum, Nutmeg, Annatto Seeds, Olive Oil, Cinnamon.
Gluten-Free Spinach Basil Garlic Linguini
I tried this linguini with my Gluten Free Chicken Alfredo sauce while my husband paired it with a traditional tomato-based spaghetti sauce. Both versions were excellent. The spinach and basil lend a fresh, herbaceous quality that works well with simple olive oil-based sauces or cream sauces alike. Italian Blend Penne
The Italian Blend penne is unique because a single package contains three different flavored pastas—tomato, basil, and garlic. I made a basil almond pesto and combined it with fresh basil from my garden; the result was aromatic and rich. Because I’m allergic to tomatoes, I separated the pieces so I could avoid the tomato-flavored penne while my husband enjoyed them all. Ingredients: Rice Flour (brown and white), Eggs (whole eggs and egg whites), Xanthan Gum, Tomato, Garlic, Extra Virgin Olive Oil, Basil, Black Pepper.
