Zucchini is one of my favorite low-carb vegetables, but sometimes it’s nice to enjoy it as the main event. These breaded Air Fryer Zucchini Chips are crispy and golden on the outside and tender inside. Serve them with ranch, ketchup, or your favorite dip — they disappear fast!

They’re perfect as an appetizer, party snack, or an after-school treat. The key to extra crunch is double-dipping the slices in egg, so the coating stays thick and crisp when air fried.

How To Make Air Fryer Zucchini Chips from Scratch

  1. Slice the zucchini into 1/2″ rounds and pat them dry with a paper towel.
  2. In a bowl, combine flour, grated parmesan, garlic powder, salt, and paprika if using.
  3. Set up a breading station with: beaten eggs in one bowl, the flour mixture in another, and panko breadcrumbs in a third.
  4. Double-dip each zucchini slice: egg, flour mix, egg again, then coat thoroughly with panko.
  5. Arrange the breaded slices in a single layer in the air fryer basket. Work in batches so they don’t overlap.
  6. Air fry at 400°F (200°C) for about 10 minutes, flipping halfway through, until golden and crispy.
  7. Transfer to a plate and serve warm with your favorite dip.

  • 1/4 cup flour
