Avocado Sprout Cheeseburgers with Shallot Mayo Recipe

Fire up the grill for Avocado Sprouts California Cheeseburgers with Shallot Mayo — a fresh, flavorful take on the classic burger that’s perfect for BBQs, picnics, and backyard gatherings. These burgers combine juicy, simply seasoned patties with creamy avocado, crunchy sprouts, bright tomato and spinach, and a tangy shallot mayo that brings everything together.

The patties are lightly seasoned so the toppings shine. Melted provolone adds a mild cheese note while the avocado and sprouts give the sandwich a crisp, fresh texture. The homemade shallot mayo adds a savory, slightly sweet tang that lifts every bite. Simple to prepare and made for sharing, these burgers are crowd-pleasers.

Avocado Sprouts California Cheeseburgers with Shallot Mayo

This recipe grew out of a craving for bright, fresh vegetables on a burger. Instead of piling on heavy toppings, the focus here is on fresh flavor and satisfying textures. Use good-quality ground beef and fresh ingredients for the best results. If you prefer bolder seasoning, feel free to adjust the spices in the patties.

Assemble the burger by starting with a toasted bottom bun, add the hot patty with melted provolone, then layer spinach, tomato slices, avocado, broccoli sprouts (or your favorite sprouts), and chopped cilantro. Spread a generous amount of shallot mayo on the top bun, close the sandwich, and serve immediately.

If you’re planning a BBQ, consider pairing these burgers with a creamy pasta salad, grilled asparagus, or a bright cocktail to complement the fresh flavors.

Ingredients

For the Burgers

  • 2 pounds ground beef
  • 1 ½ teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 4 slices provolone cheese
  • 1 cup whole spinach
  • 1 large tomato, sliced
  • 1 cup broccoli sprouts (or your favorite sprouts)
  • 1 cup avocado, sliced
  • ½ cup cilantro, chopped
  • Shallot mayo (see below)
  • 4 burger buns

For Shallot Mayo

  • ¾ cup mayonnaise
  • 1 shallot, finely chopped
  • Pinch of salt and pepper

Instructions

  1. In a medium bowl, combine the ground beef, garlic powder, onion powder, salt, and pepper. Mix gently to combine, then form into four equal balls.
  2. Shape each ball into a hamburger patty. Grill the patties to your desired doneness. In the last minute of cooking, place a slice of provolone on each patty to melt.
  3. While the patties rest briefly after grilling, mix the mayo, finely chopped shallot, and a pinch of salt and pepper. Chill the shallot mayo for at least an hour if possible to let the flavors meld.
  4. To assemble, toast the bottom bun, add a patty with melted cheese, then layer spinach, tomato, avocado, sprouts, and cilantro. Spread shallot mayo on the top bun and close the burger.
  5. Serve immediately and enjoy.
