Ingredients

For the crepes —

  • 2 cups milk
  • 1 cup all-purpose flour
  • 3 large eggs
  • 2 tbsp melted unsalted butter
  • 2 tbsp grated piloncillo or dark brown sugar
  • 2 tsp coffee extract
  • 1 tsp ground cinnamon
  • ¼ tsp ground clove
  • tsp ground star anise, or a pinch of Chinese five spice
  • Zest of 1 orange
  • Pinch of salt

For the whipped topping —

  • ½ tbsp grated piloncillo or dark brown sugar
  • ¼ tsp ground cinnamon
  • Pinch of ground clove
  • Pinch of ground star anise or five spice
  • tsp coffee extract
  • ½ tsp vanilla extract
  • 12 oz (about 3 cups) store-bought whipped topping
  • Optional: small pinch of orange zest for brightness

For finishing —

  • Unsweetened cocoa powder, for dusting
  • Chocolate shavings or curls

Instructions

  • In a blender, combine all crepe ingredients: milk, flour, eggs, melted butter, piloncillo or brown sugar, coffee extract, cinnamon, clove, star anise, orange zest, and a pinch of salt. Blend until the batter is smooth and well combined. For best texture, chill the batter for 30 minutes to allow the flour to hydrate fully.
  • Heat a nonstick skillet or crepe pan over medium heat. Lightly grease the pan only for the first crepe, then wipe out any excess fat so subsequent crepes cook evenly and remain thin.
  • Pour about 3 tablespoons of batter into the hot pan, quickly tilting and swirling to coat the surface in a thin layer. Cook about 45–60 seconds per side, until the crepe is set and lightly golden. Transfer cooked crepes to a flat surface to cool.
  • If you want uniform layers, trim the cooled crepes with a 7-inch round cutter or a sharp knife. Otherwise, leave the edges rustic for a homemade look.
  • Prepare the flavored whipped topping: in a small bowl, combine grated piloncillo or brown sugar with coffee extract and vanilla. Let it sit for a minute, then stir until the sugar is mostly dissolved and the mixture is aromatic.
  • Fold this coffee-piloncillo mixture into the whipped topping along with the spices (cinnamon, clove, star anise or five spice) and a pinch of orange zest if using. Mix gently until combined. Chill the filling until ready to assemble so it holds its texture.
  • Assemble the crepe cake by placing one crepe on your serving plate and spreading about ¼ cup of the whipped topping evenly over it. Repeat with remaining crepes and filling, stacking as you go. Save enough cream to finish the top and sides.
  • Smooth the remaining whipped topping over the top and sides of the cake. For clean slices, chill the assembled cake for at least 2 hours; chilling overnight yields even better results.
  • Before serving, dust the top with a light coating of unsweetened cocoa powder and garnish with chocolate shavings or curls for contrast.
  • Slice with a sharp knife, wiping the blade between cuts for neat portions, and enjoy the warm, spiced flavors in each delicate layer.

Notes

  • Resting the batter improves the crepe texture, producing crepes that are more tender and flexible, which makes stacking and slicing easier.
  • If you need to speed up cooking, use two pans and work with a helper; two crepes can be cooked at once for efficiency without sacrificing quality.
  • If you prefer fresh whipped cream to a store-bought topping, whip 2 cups of heavy cream with approximately 2 tablespoons of powdered sugar and a splash of vanilla until stiff peaks form, then fold in the piloncillo and coffee flavor.
  • Trimming the crepes with a cutter gives a clean, professional look. Leaving the edges uneven creates a charming, rustic presentation—choose based on the occasion.
  • For best slicing and presentation, chill the assembled cake thoroughly. The cake slices more cleanly when fully chilled; for convenience and flavor development, refrigerate overnight when possible.

Variations: swap the coffee extract for strong brewed espresso reduced to a syrup if you prefer natural coffee over extract, or adjust spices to taste—more cinnamon for sweetness, or a touch more clove for depth. For a lighter version, use a lower-fat milk, but keep in mind texture may be slightly less rich.

Storage: store any leftover crepe cake chilled and covered for up to 3 days. The layers remain moist and flavorful, though the whipped topping is best within the first two days for optimal texture.
