
Smoked Salmon Cucumber Bites

Ingredients
- 2 English cucumbers peeled and sliced into 1/2-inch rounds
- 1 lb. smoked salmon cut into bite-sized pieces
- 1 (8 oz.) pkg. cream cheese softened
- 3 T. fresh dill chopped
- 1 T. horseradish sauce (more or less to taste)
- 1 T. heavy cream
- capers for garnish
- toothpicks or tiny party forks for serving
Instructions

Peel the cucumbers and slice them into 1/2-inch rounds. Arrange the slices on a platter and chill in the refrigerator while you prepare the cream cheese mixture.

In a medium bowl, beat the softened cream cheese with the chopped fresh dill, horseradish sauce, and heavy cream until the mixture is smooth and spreadable. Adjust the horseradish to taste.

Spread about 1 teaspoon of the cream cheese mixture onto each cucumber round (use more or less as you prefer). Top each with a bite-sized piece of smoked salmon, then secure with a toothpick or small party fork. Finish with a few capers for garnish.
