Smoked Salmon Cucumber Bites

Ingredients

  • 2 English cucumbers peeled and sliced into 1/2-inch rounds
  • 1 lb. smoked salmon cut into bite-sized pieces
  • 1 (8 oz.) pkg. cream cheese softened
  • 3 T. fresh dill chopped
  • 1 T. horseradish sauce (more or less to taste)
  • 1 T. heavy cream
  • capers for garnish
  • toothpicks or tiny party forks for serving

Instructions

  • Peel the cucumbers and slice them into 1/2-inch rounds. Arrange the slices on a platter and chill in the refrigerator while you prepare the cream cheese mixture.
  • In a medium bowl, beat the softened cream cheese with the chopped fresh dill, horseradish sauce, and heavy cream until the mixture is smooth and spreadable. Adjust the horseradish to taste.
  • Spread about 1 teaspoon of the cream cheese mixture onto each cucumber round (use more or less as you prefer). Top each with a bite-sized piece of smoked salmon, then secure with a toothpick or small party fork. Finish with a few capers for garnish.
  • Serve immediately or keep the assembled bites chilled in the refrigerator until ready to serve.
